Why Must Flaxseed Oil Be 'Fresh'?

Oxidation means an oil becomes 'rancid' and loses its nutritional value. The Omega-3 fatty acids in flaxseed oil are very sensitive to oxidation due to their structure.

There is a high risk that a bottled oil bought from the market has already lost most of its nutritional value by the time it reaches the shelf. Therefore, "fresh pressing" for flaxseed oil is not a luxury, but a necessity.
